Feta is produced by coagulating pasteurized or raw sheep's milk, cutting and pressing the curds, then aging the blocks in brine for at least 2 months — the salt penetrates throughout and the acidity develops as lactic bacteria continue their work. The high salt and acid content makes feta one of the most stable cheeses for salads, hot preparations, and room-temperature service. In heat, feta doesn't melt in the traditional sense — it softens, becomes creamy and spreadable, and loses some sharpness, making it excellent baked in tomatoes or roasted whole with olive oil and herbs. Greek salad (with tomatoes, cucumber, olives, and olive oil) is the most famous application — the salt of the feta dresses the vegetables while its acidity brightens.
